Banana bread, but make it matcha. This sweet, cinnamon‑spiced twist on an iced matcha latte brings all the cosy bakery vibes without turning on your oven. Perfect for brunch, an afternoon pick‑me‑up or just when you want something a bit special.
Ingredients (Serves 1)
For the banana bread syrup
-
½ cup brown sugar
-
½ cup water
-
1 ripe banana, blended to a smooth purée
-
A pinch of cinnamon
-
A pinch of cardamom
For the matcha latte
-
Banana bread syrup (from above)
-
Milk of choice (around 200–250 ml)
-
2g/ 1 tsp PerfectTed Original Matcha Powder
-
30–40 ml warm water (under 80 °C)
-
Ice (optional but lovely for iced drinks)
Method
-
Make the banana bread syrup
In a small saucepan, combine the brown sugar, water, banana purée, cinnamon and cardamom. Warm gently until the sugar dissolves and everything loosens into a glossy syrup. You can blend again if you like a perfectly smooth texture. -
Whisk the matcha
Place the 2g of PerfectTed Original Matcha Powder in a small bowl. Add 30–40 ml of warm water (less than 80 °C) and whisk briskly until smooth and lightly frothy. -
Prepare the glass
Fill a glass with ice (if using). Add a generous splash of the homemade banana bread syrup. -
Add the milk
Pour your milk of choice over the syrup and ice. Stir gently to combine. -
Top with matcha
Slowly pour the whisked matcha over the milk and enjoy the layered look before stirring it all together.
Tips for the Best Banana Bread Matcha Latte
-
Sweetness balance: The banana bread syrup is rich and naturally sweet. Adjust the amount you add depending on how sweet you like your drink.
-
Warm water for matcha: Hot water that’s too hot can make matcha bitter, so keep it under 70 °C and whisk well to dissolve all the powder.
-
Spice it up: Cinnamon and cardamom echo classic banana bread flavours, but you can add a tiny pinch of nutmeg or ginger for extra warmth.
-
Milk alternatives: Barista‑style oat milk gives a creamy mouthfeel, but almond or soy work beautifully too.
Why This Works
This drink plays with contrast - the umami matcha meets cosy banana and spice notes, all mellowed with milk and sweet syrup. It’s like a hug in a glass, without needing to bake actual banana bread.
